Cost: $125 + tax and gratuity

Wine Vault & Bistro is pleased to announce a special 6-course wine dinner featuring the wines from all three of Revana’s properties including Corazon del Sol in Argentina’s Uco Valley (which we visited on the Chile / Argentina wine tours earlier this year), Alexana Winery in Oregon’s Willamette Valley and Revana Estate in Napa Valley.

Founder Dr. Madaiah Revana will be here in person to host Saturday’s dinner. If you’re interested in reading the fascinating story that chronicles his journey from growing up in a modest Indian village to world-renown cardiologist to producer of premium wines, you can do so here. https://www.revanavineyards.com/dr-revana/ Also, just a heads up that Dr. Revana will only be hosting Saturday’s dinner as he’s still very much active as a cardiologist and has to be back in Texas at the crack of dawn Monday to oversee a complicated open-heart surgery. But National Sales Manager Koby Howards will be here in his place to host a Sunday dinner if demand warrants with the exact same menu and exact same wines.

We’ve designed an eclectic menu that pairs perfectly with the wide range of wines from two different continents and three different wineries. We’re featuring a decade plus old library vintage of arguably one of the finest Oregon Rieslings you’ll ever try in its price point, a Pinot Gris and a Pinot Noir also from Willamette Valley, the favorite Cabernet Franc from Uco Valley of everyone who went on the Chile / Argentina wine tours, and their 95-point Cab from Napa. It should be a line-up you won’t soon forget.

Hope to see you here! Wine notes and bottle prices are at the end of this announcement and the menu is below.

RESPOND WITH THIS INFO

1. your cell number and best time to call so we can call you to update your credit card info

2. how many people are in your party, and

3. answers to the HEAD’S UP questions in the paragraph below if you’re a party of 1 or 2.

HEAD’S UP

We have a very limited number of tables for couples who want to sit by themselves so please let us know if you’re willing to sit at long communal tables (“Last Supper” style) as that will greatly increase your chances of getting in. (Yes, we understand that this is a Valentine’s dinner and that most folks will want a private table and, yes, we will do our best to accommodate that but at some point we max out on private tables!) We also have a firepit table for two (https://www.winevaultbistro.com/fire-pit) available so let us know if you’re OK with that table if you want to sit by yourselves. Also, please consider inviting another couple or two to join you as if you’re a party of four or six there won’t be a problem getting your own table.

LOCATION & PHONE

Wine Vault & Bistro is located in the heart of San Diego between Little Italy and Old Town at 3731-A India Street on the upstairs terrace. Follow the black handrail up the stairs from the sidewalk to our front door. Our phone number is (619) 295-3939.

PARKING

Metered and non-metered on-street parking is usually available within a 3-block radius. Try to find non-metered parking as the new meters are now enforced seven days a day until 8:00PM yet still only allow a maximum of two hours. You can also park in the free lot behind Shakespeare Pub two doors down, but do not park in El Indio's lot unless you want your car towed! If you can’t find parking next to the restaurant, there’s usually parking on the side streets behind the restaurant, on San Diego Avenue one block in front of the restaurant and on the adjacent side streets just past the Chevron station across Washington Street. If you plan to drive here make sure to allow yourself plenty of time to find a parking space but ideally use a rideshare app like Uber or Lyft so you don’t have to deal with it.

WINE NOTES & BOTTLE PRICES

2015 Alexana “Revana Vineyard” Riesling ~ $25

(Dundee Hills, Willamette Valley, OR) Nose of petrol, white flowers, crushed wet gravel and Granny Smith apple. Palate has striking acidity with flavors of white grapefruit, gooseberry, white peach, Gravenstein apple and Key lime.

2025 Alexana “Hillsides” Pinot Gris ~ $23

(Willamette Valley, OR) A complex combination of savory and sweet. Vivid nectarine and green apple are complemented by nuances of lemon sorbet and mint on the nose. Soothingly round attack with silky textures and cooling acidity that elevate its ripe pit fruits on the palate. Ends with mouthwatering, subtle citrus inflections.

2023 Alexana “Mosaic” Pinot Noir ~ $30

(Dundee Hills, Willamette Valley, OR) Lively and fresh, with lovely raspberry and strawberry flavors accented by orange blossoms and fresh violet. Long, supple, refined finish.

2023 Corazon del Sol “Revana Vineyard” Cabernet Franc ~ $27

(Uco Valley, Mendoza, Argentina) 100% Cabernet Franc from a single high-elevation block at the foot of the Andes, where alluvial soils and abundant sun create ideal conditions. Aged 15 months in French oak, it offers varietal purity with aromas of jam, red pepper and tobacco, and a full-bodied, elegantly structured palate.

2023 Revana “RX” Cabernet Sauvignon ~ $79

(Napa Valley) 84% Cabernet Sauvignon, 8% Merlot, 4% Cabernet Franc + 4% Petite Verdot. Opens with an aromatic rush of dark fruits like black cherries, Bing cherries and a hint of blueberry. Layered nose of lifted violets, crushed graphite, spices and dried herbs, all of which echo seamlessly on the palate. Full–bodied and beautifully textured, delivering impressive concentration without sacrificing polish. A dense core of ripe black fruit is wrapped in velvety tannins, unfolding in waves of flavor that build toward a long, expressive finish. This is a bold yet refined expression that is already striking in its complexity, with the structure and balance to enjoy over the next 20 years.

WV&B’s “Covid Cuvee” Manhattan ~ $20 (200ml hip flask)

A magical blend of premium Bourbon, Antica Carpano Italian Sweet Vermouth, a touch of Rye and Luxardo Cherry Liqueur plus a splash of special Old Fashioned Bitters all seamlessly aged together in four charred oak barrels solera style since 2020. Affectionately called our “Covid Cuvée,” we started the first barrel in March of 2020 as a treat for our customers to enjoy while standing in line for their take-out winemaker dinners when dine-in was shut down. We gradually added more barrels over the years but have never let the original barrel go completely dry. So there’s always a little bit of every single year’s batch (going on almost seven years now) in every single bottle. The result? The best Manhattan you’ll ever have with an unduplicatable level of complexity that just goes on and on and on ....

THE FINE PRINT

Due to fluctuations of supply, we reserve the right to make substitutions of equal or greater value in case any of the wines or foods become unavailable. Please, ABSOLUTELY POSITIVELY NO ONE UNDER THE AGE OF 21 ... even if your babysitter flakes out on you at the last minute!

Hope to see you here. Buon appetito and cheers!

Chris
