About Copious Cellars:

Copious Cellars began in 2013 as a shared project between Tyson Smith and his father, a retired scientist with a passion for Cabernet Sauvignon. What started as an experiment became something more—years of learning, trial and error, and time spent side by side. The wines evolved, but the real foundation was built in curiosity, creativity, and connection.

After his father’s unexpected passing in 2018, Tyson found himself at a turning point. What remained were his father’s meticulously kept winemaking notes—detailed records of every vintage, every experiment, every idea. Those “copious” notes became both guide and inspiration, transforming uncertainty into purpose.

Today, Copious Cellars is a continuation of that story—a small-batch winery rooted in craftsmanship, discovery, and legacy. Each bottle reflects not only the process, but the people and moments behind it.
