Cabernet Sauvignon is one of the world’s most recognizable grapes, known for structure and a strong sense of place. But Cabernet is not a single style, and treating it that way misses the point. This tasting moves beyond the usual benchmarks to look at how climate, soil and winemaking choices shape Cabernet into dramatically different wines.

We begin where Cabernet built its reputation: Bordeaux, where it rarely stands alone. Instead, it forms the backbone of blends designed for balance. Gravel soils and a maritime climate tend to produce wines with restraint and detail: blackcurrant and graphite, cedar and tobacco leaf, firm tannins and long finishes. These are wines that develop over the course of a meal and continue to reward time in the cellar.

From there, we cross to Napa Valley, where Cabernet often shows a riper fruit profile, blackberry, cassis and plum, and oak that can add vanilla, cocoa and sweet spice. Napa also has real internal range. Hillside vineyards can bring more tension and structure, while valley floor sites lean broader and more generous. The best bottles combine power with poise and richness with clarity.

Moving south, we encounter Chile and Argentina, where Cabernet often sits in a useful middle ground between Old World structure and New World fruit. In Chile, Andes and Pacific influences help preserve acidity and bring a distinct herbal edge, eucalyptus, green peppercorn and fresh tobacco over dark fruit. Argentina, often overshadowed by Malbec, can deliver Cabernet with lift and spice, shaped by altitude and intense sunlight.

Australia offers yet another interpretation, especially in regions like Coonawarra and Margaret River. Coonawarra’s terra rossa soils can produce Cabernet with mint, cassis and firm structure. Margaret River often leans more Bordeaux-adjacent in profile, with freshness and polish alongside ripe fruit.

Finally, we return closer to home with regions across the United States beyond Napa. Washington State, with cooler nights and a long growing season, often produces Cabernet with precision: dark fruit, firm acidity, finely grained tannins and a savory, stony undertone.

What emerges across these glasses is not one identity, but a spectrum. Cabernet becomes a way to taste place and approach, how conditions and choices shape fruit, structure and finish.

By the end of the tasting, the question shifts. It is no longer “What is Cabernet Sauvignon?” but “How does it change when the ground and the growing season change?”
