Midnight Manila: a future-noir tasting with cocktails, market bites, and a four-course immersive dinner inspired by Manila after dark.

An immersive projection dining experience.
Modern Filipino fine dining.
A first-of-its-kind evening in Seattle.

Experience Manila after dark through an immersive, projection-led four-course dinner. Chef Jaimee Fuertes Skinner presents a forward vision of Filipino cuisine that is refined, unexpected, and layered with noir undertones, paired with market-inspired bites that echo the streets beneath the surface.

ABOUT THE EXPERIENCE

The evening begins with cocktail hour.
A first pour. Market bites. A gradual pull into the world of Midnight Manila.

From there, the experience deepens.

Guests move into the main dining space for a four-course dinner set within an environment that shifts with each course. Light moves beneath and around you, reshaping the room as each course is revealed.

Inspired by the pulse of a night market and framed through a future-noir lens, Midnight Manila moves between flavor, feeling, and scene.

An atmosphere shaped by shadow and light.
By heat, smoke, and anticipation.
By the energy of Manila after dark.

Menu to be announced.
