There are winemakers and there are winemakers who have “the touch.”


What’s the touch?


It’s the ability to know exactly what to do in the vineyard and the cellar to bring out the best of that wine. No matter the vintage and the conditions. Very, very few winemakers on earth can do that with every grape in every vintage. Very few.


Jessica is doing this with very small amounts of wine. 1,200 - 3,600 bottles per bottling. That’s miniscule. Darkroom is lucky to get the allocations that we get from her. Very lucky.


She picked up her remarkable skills through years of hard work. Jessica is also one of the most lovely people that we know. There is a grace about her. But also an intense deliberateness. She knows what she is trying to do and will work herself to the bone to make every wine perfect. She’s not just a winemaker. She’s an inspiration.


So what are the wines like?

Elegant and pure beyond belief. Imagine any wine from any grape stripped to its essence with no fluff, nothing extraneous. Just 100% purity.

Balanced. There are no sharp edges with nothing jutting out - everything just works.

Delicious. They are so good, in every sip, you want the moment to last.


We are very lucky to have Jessica coming down from the Central Coast to darkroom to do this dinner. We’ve gone to the well to make a menu worthy of her talents.
