I think our next scheduled event is a great way to herald the holiday season: a celebration of sparkling wines. We will pair 6 sparkling wines with our meal with one of the goals to prove that Champagne and other sparkling wines are not just celebratory but an integral part of a meal.
We return to our trusted and true venue at Tre Scalini,
which in my humble opinion is New Haven's best Italian restaurant. Joe Mairorano will work with us to pair each course with a sparkling wine. This event was inspired by a tasting I attended years ago sponsored by Lanson Champagne and the purpose was to demonstrate that sparkling wines can be served throughout the meal.

Antipasti
Polenta Cake, Warm polenta cake infused with Maytag Gorgonzola finished with a light cream sauce with mushrooms.

Spaghetti finished with caramelized onions, pancetta, and Sweet English peas in a light sherry cream reduction.

White flakey fish topped with Italian style bread crumbs finished with a lemon herb reduction and baby shrimp risotto.
