You might check zagats.com as they currently list (under "Features") over 500 NYC restaurants which offer prix fixe menus. It's a large group to look over, but there are surely some that combine wine and food. These particular menus are bound to change regularly, so you could call a few restaurants of interest to see what they might currently offer.
