What type of wine would you pair with paczki's? Cannoli, custard, raspberry lemon and apple flavored. Thank you for your help.

Let me cover both desserts you mention with one set of wine recommendations since I think there are flavors in common. As far as paczki is concerned, this Polish doughnut is traditionally filled with plum jam and may be dusted with powdered sugar. A cannoli is of Sicilian origin and has a creamy filling based on ricotta. Other accents may be added. I think you are asking about a cannoli which might contain various fruits as well. Sweets of this sort, those with fruity flavors together with pastry or (in these two cases) fried dough, will match beautifully with a variety of sweet wines. These would include delicate examples such as Asti Spumante and Moscato d'Asti as well as late-harvest wines from many grape varieties. If you want to splurge, try a Sauternes. For stronger, more powerful options, certain fortified wines would match these desserts: a Tawny Port would be delicious. This style would also be able to deal with a cannoli with chocolate chips, as some do.
