HGS Home Chef presents Thursday night mini classes, a new format in our cooking tutorials. Held on the occasional Thursday from 5-6pm these in-person classes focus on specific techniques or pantry items intended to expand your home cooking skills and flavor game. Instead of our more costly, 2.5-hour classes, followed by full meals, these weekday mini classes offer instruction, recipes, tastings and expert advice, all for just $45.
In this Mayo & More class, we will make “miracle mayonnaise” together and learn the simple technique behind creating a perfect emulsion every time. You’ll be surprised how fast and easy it is to make fresh, delicious mayonnaise at home using an immersion blender. Once you learn the technique, you’ll never look at mayonnaise the same way again. Then we’ll transform our homemade mayo into delicious dressings and variations followed by an exploration of the many ways it can be used.
Together, we’ll sample Sriracha mayo, creamy ranch dressing, and mayo-grilled cheese, discovering how a simple homemade condiment can become a flavorful sauce, dressing, or even the secret to a perfectly golden grilled sandwich.
There’s something satisfying about knowing you can make a delicious staple from scratch in just minutes, allowing one simple kitchen technique to open the door to a variety of culinary adventures.
This one-hour demonstration class and tasting is limited to ten people
Lee Davenport left NY at the age of 23 and immediately connected her love of food with farming in the Midwest. Signing up to be a worker share member at a CSA farm in Madison sparked many culinary adventures: working farmers' markets and farm-to-table restaurants, delivering produce for a collective of organic farms to Chicago area restaurants, owning a food cart and a jam business, and serving as farm chef on two different CSA farms. After relocating to Portland, Oregon to live in an Ecovillage and try her hand at growing food in community, a cross-country road trip completed the circle with a move back to upstate NY. Here she is connecting with farmers and chefs again in her work at Zinnia's Dinette and HGS Home Chef. An excellent baker, Lee is grateful for the opportunity to share her lifetime experience of creating a wide variety of delicious dishes.
