We are very excited to announce our next winemaker dinner series, including an evening at our La Mesa/Lake Murray location, Brew Coffee! For our July Winemaker Dinner Series we're thrilled to share a fantastic line up of 5 micro-production wines from boutique winery, Thidibo. Co- Owners and Winemaker Josh and Gibsey Beckett will be joining us for each evening. Josh has an old school approach to growing and making wine with a new school attitude. He’s been in the wine industry his entire life but continues to learn and grow, collaborate with his peers and try new things in the vineyard and in the winery. As a kid, Josh grew up at Peachy Canyon Winery with his family, founders Doug and Nancy Beckett. After years discovering his own way of making wine, first in Australia, then returning to Paso. Josh, alongside his brother, Jake, created a name for himself as co-owner and winemaker of edgy, boundary-pushing brand, Chronic Cellars. Chronic was an outlet for Josh to experiment with unconventional blends, small lots of fruit and new age winemaking techniques. After selling Chronic Cellars to WX Brands, Josh and his wife/co-owner, Gibsey developed and planted Thibido vineyard in 2018 and 2019. This vineyard is the culmination of Josh’s experience, planted with several varietals, rootstocks and trellising styles in order to maximize the quality of the fruit and minimize the need for overly invasive winemaking. To showcase these wines, Chef Erin has created an elevated, seasonal pairing menu. You won't want to miss this memorable evening of wine, food and conversation! Each selection will be paired with its own wine inspired dinner course, prepared by Chef Erin Sealy. Chef Erin specializes in pairing food with wine, with a slightly different approach than most. Prior to creating a menu, each wine is tasted and reviewed and then she creates a food pairing, highlighting the nuances of each wine. This concept creates a dinner and pairing experience with layers of complexity and unique creations which exemplify the enjoyment of each wine. With a passion for food and wine, Chef Erin delights attendees with a detailed account of the pairing concept and cooking techniques that create each course.
