Prepare to fall in love with vanilla all over again. Most of us know vanilla as a baking staple, but in this unique hands-on class, you'll discover how its rich, aromatic flavors can shine in both savory and sweet dishes. Together, we'll create a menu that showcases vanilla's versatility from the first course to the final dessert.
We're also delighted to welcome The Casa Market, a company dedicated to preserving and sharing Mexico's rich culinary traditions. Their exceptional vanilla comes from Casa Papantla in Veracruz, where a family tradition of producing premium vanilla dates back to 1873. For more than 150 years, generations have perfected the art of cultivating and crafting one of the world's most treasured ingredients.
Meet the team behind The Casa Market, hear their story firsthand, and gain a deeper appreciation for the birthplace of vanilla. You'll leave with new culinary techniques, fresh inspiration, and a newfound respect for this extraordinary ingredient.
Hands-On. You will be cooking with a small team in this class.
ABOUT THE CASA MARKET:
The Casa Market celebrates the rich heritage of Mexican vanilla, sourcing its premium vanilla from Casa Papantla in Veracruz, the historic birthplace of vanilla. For centuries, the Totonac people of Papantla revered the vanilla orchid as a sacred gift, and their region became known as “the City that Perfumes the World.” This remarkable ingredient later found its way into the spiced cacao drinks of Aztec emperors before captivating Europe and the rest of the world.
Today, that legacy lives on through Casa Papantla, where a family tradition of producing exceptional vanilla has been passed down since 1873. The Casa Market is committed to preserving these generations of craftsmanship while supporting more than 300 farming families in the region. By sharing the authentic flavors and stories of Papantla, they honor one of the world's most treasured ingredients and the communities that continue to cultivate it.
