Most people eat prosciutto, very few know how to taste it.

At La Farmette, discover Italian salumi - Italian cured meats - through a guided ritual of sight, aroma, and taste—followed by a traditional Italian table in a rustic farm setting.


This is not a charcuterie board.

This is a guided Italian tasting experience led by an Italian host—designed to slow things down and rediscover what quality truly means.

In Italy, salumi is not just eaten.
It is observed, smelled, understood—and only then enjoyed.


The Italian Salumi Ritual

You will be guided through a curated selection of exceptional Italian salumi, each chosen to illustrate a different expression of craftsmanship.

The experience unfolds in three intentional phases:

1. See

Learn how to read salumi visually—color, texture, marbling, and what they reveal about quality and aging.

2. Smell

Discover the aromas that define each product—from delicate sweetness to deeper, cellar-aged notes.

3. Taste

A guided tasting where you will experience contrast, balance, and structure—simply paired, as it should be.


What You Will Taste

Your tasting will include a focused progression of 3–4 Italian salumi, such as:

  • Prosciutto Crudo di Parma — Italy’s iconic dry-cured ham, celebrated for its buttery texture and delicate, salty-sweet flavor. Delicate, silky, and balanced.
  • Culatello di Zibello — The "King of Italian Salumi". It is an exceptionally rare and prestigious cured meat. Deeper than prosciutto, more complex, and rarely experienced outside Italy.
  • Mortadella di Bologna — The original, more refined Italian ancestor of American bologna. Aromatic, soft, delicate, and with a creamy mouthfeel.
  • Coppa Piacentina DOP— Premium Italian whole-muscle salume, its intense marbling creates a silky, tender texture that is firmer than prosciutto, but more delicate than most sausages.

This is not a large assortment, but a carefully designed sequence—each element selected to build understanding through contrast.

Following the guided Salumi Ritual, guests transition into a simple, carefully designed Italian dish that extends the same principles explored during the tasting—balance, restraint, and respect for ingredients.

The experience continues at the table.

This portion is part of the educational process, and reflects the same thematic focus explored during the tasting—demonstrating how salumi (Italian cured meats) can also complement and elevate warm dishes.

Pasta Course

A traditional Italian pasta preparation built around Guanciale, paired with a classic cheese and pepper profile.

This course illustrates how a salume—experienced earlier in its pure form—can also serve as the foundation of a composed dish, offering a different expression through cooking.

Seasonal Side — Balance & Contrast

A fresh, seasonal preparation designed to bring balance and contrast, introducing lightness alongside the richness of the salumi and pasta.

Tiramisu — Closing the Experience

A traditional tiramisu to conclude the experience, catered by Dolcemisù, a renowned boutique tiramisu store in Washington, DC.

The final expression of balance—bringing together sweetness, bitterness, and texture.
