At La Farmette, discover Italian salumi - Italian cured meats - through a guided ritual of sight, aroma, and taste—followed by a traditional Italian table in a rustic farm setting.
This is a guided Italian tasting experience led by an Italian host—designed to slow things down and rediscover what quality truly means.
In Italy, salumi is not just eaten.
It is observed, smelled, understood—and only then enjoyed.
You will be guided through a curated selection of exceptional Italian salumi, each chosen to illustrate a different expression of craftsmanship.
The experience unfolds in three intentional phases:
1. SeeLearn how to read salumi visually—color, texture, marbling, and what they reveal about quality and aging.
2. SmellDiscover the aromas that define each product—from delicate sweetness to deeper, cellar-aged notes.
3. TasteA guided tasting where you will experience contrast, balance, and structure—simply paired, as it should be.

Pasta CourseA traditional Italian pasta preparation built around Guanciale, paired with a classic cheese and pepper profile.
This course illustrates how a salume—experienced earlier in its pure form—can also serve as the foundation of a composed dish, offering a different expression through cooking.
Seasonal Side — Balance & ContrastA fresh, seasonal preparation designed to bring balance and contrast, introducing lightness alongside the richness of the salumi and pasta.
Tiramisu — Closing the ExperienceA traditional tiramisu to conclude the experience, catered by Dolcemisù, a renowned boutique tiramisu store in Washington, DC.
The final expression of balance—bringing together sweetness, bitterness, and texture.
