Did you know there are two beehives on our roof? They've been up there working all season — foraging Fulton Market, building comb, making honey nobody's tasted yet. On August 13, that changes.
In honor of National Honey Bee Day, we're teaming up with Windy City Pollen — the beekeepers who actually maintain our hives — to bring that harvest down from the roof and into the room. This isn't a honey tasting with some jars set out on a table. You're getting the whole process, front row.
We'll start with the data: hive health, colony performance, and lab results on this season's honey, projected right in front of you. Then a Windy City Pollen will take you through a guided tasting, comparing the honey's testing results and actual taste.
From there, things get hands-on — a small group gets pulled up to help cut the wax cap and slice the frame, watching raw honey get bottled in real time. We'll close out with a Hive Happy Hour: a relaxed reception with charcuterie built to pair with the honey you just watched come out of the comb.
Fifty seats. One harvest. And a bottle of that honey to take home with you.
