Born in Bangkok and raised in New York, Cédric’s culinary journey has taken him from the kitchens of London’s Berkeley Hotel and Hong Kong’s Mandarin Oriental to the famed El Bulli in Spain. A Culinary Institute of America graduate, he refined his craft under his father, Jean-Georges Vongerichten, before helming kitchens at Perry St and launching his own celebrated NYC restaurants, Wayan and Ma•dé.
At Amalia, Cédric will present a thoughtfully curated menu that showcases his signature blend of French technique and global flavors. Drawing inspiration from his extensive travels and diverse culinary experiences, each dish promises to be a harmonious fusion of tradition and innovation.
Joining him is Chef Juan Carlos Díaz, who, alongside Gabriel Barrera, leads the kitchen at Amalia, bringing deep expertise in Mediterranean and Latin flavors.
