Now, we are honored to bring Ned back in a series of pop-ups that not only serves Ned’s personally prepared favorites, but also gives you, your children, grandchildren, and beyond, an opportunity to share in the stories and adventures from Ned himself!

Ned Pollack is a kind of legend across St. Augustine's culinary community. His restaurants have been so popular that over the years he's continually been asked for the secret to his success, especially the recipes behind those famed dishes. Like most of the best chefs, Pollack hails from the school of "a little bit of this, a little bit of that" in his approach to cooking.
Take, for example, his Gypsy Cab Chicken, an homage to the bohemian-style eatery he opened in 1983 on Anastasia Boulevard. It's a breaded chicken cutlet stuffed with Swiss cheese — "basic comfort food," Pollack said — but elevated to a presentation worthy of a French bistro with a sauce made from a beef demi glace, mushrooms and tarragon.
Other recipes, like the house salad dressing at Gypsy Cab Co., were borrowed from Pollack's wanderings across the country — in this case, from a "hippie commune out in Tennessee" — and still others, like Shrimp French Quarter, were from contributions of fellow cooks, like the late Greg Dudley, a chef at Gypsy Cab.
"Basically, I was a mess who made it," Pollack said with a laugh. "I've served four generations in St. Augustine."
