Founded in 1972 and long celebrated for its Cabernet‑driven winemaking, Silver Oak brings a legacy of American‑oak aging to this intimate evening. The menu moves through a thoughtful progression of courses, beginning with a chilled crab and cucumber preparation layered with chamomile, almond, and green apple. The second course features squab accented with cherry, barley, charred radicchio, and a violet‑sassafras jus. A dry‑aged strip follows, enriched with cocoa nib, bone marrow, smoked eggplant, and black garlic. The evening concludes with a pistachio‑crusted lamb rack complemented by charred allium, sunchoke, and mustard seed. Each course is paired with selections from Twomey and Silver Oak, creating a thoughtful interplay of cuisine and iconic California wines.
