Old Elk (based in Fort Collins, Colorado) has earned a reputation for doing things a little differently; especially with their Slow Cut proofing process, where they take their time proofing whiskey down in smaller steps (often over weeks instead of days) to help preserve delicate aromas and flavor.

They are also known for bold, flavorful recipes like their high-malt bourbon approach (notably a much higher malted barley percentage than typical bourbon mash bills), bringing extra depth and a distinctive, smooth character to the glass.
