The Willis brothers work on two stills: a 150-gallon Kothe still, which they use for their gins, and a 750-gallon Christian Carl still, which they use for everything else. While the volume has changed since the days of a five-gallon stove top still, the philosophy has not. They still obsess over every drop that comes off the still, meticulously smelling and tasting it, and making sure nothing goes into the bottle that doesn’t meet their standards.
