Explore the Ciders of the World

Cider is one of the world’s oldest fermented beverages—and today it’s experiencing an exciting global revival. In this guided tasting, we’ll explore a range of cider styles from traditional producing regions across the world while learning how apples, climate, and production methods shape what ends up in the glass.

Participants will taste a curated flight of international cider styles, including examples inspired by English, French, Spanish, and American traditions, alongside modern craft interpretations. The tasting will also feature Grand Lac Cider, produced by students in Lake Michigan College’s Wine & Viticulture Technology Program.

Together, we’ll examine how tannin, acidity, sweetness, carbonation, and fermentation choices influence cider structure and style—and how cider compares to wine as a fermented beverage.

Whether you are new to cider or already curious about global cider traditions, this tasting offers an engaging introduction to the diversity of cider from around the world.

Meet your Instructor - Tim Godfrey!

Tim Godfrey is Director of the Wine & Viticulture Technology Program at Lake Michigan College, where he leads one of the Midwest’s only programs integrating vineyard production, winemaking, hospitality, and beverage business education into a single hands-on learning environment. Tim is a Certified Pommelier through the American Cider Association and will use his expert knowledge to guide you through the wide world of Cider!


About Extended Education at the Welch Center

This course is offered through Lake Michigan College’s Extended Education program for personal enrichment and is non-credit. It is designed for community members, wine enthusiasts, and lifelong learners interested in expanding their appreciation and understanding of wine.

The class takes place at the Welch Center for Wine & Viticulture Technology, home to the Midwest’s only commercial teaching winery. The Welch Center supports Lake Michigan College’s Wine & Viticulture Technology Program, where students gain hands-on experience producing wines released under the Lake Michigan Vintners label while preparing for careers across the wine industry.
