Spanish food is some of the most recognized "fine dining" in the world. From El bulli to Arzak and many more, Spanish chefs have defined how we make fancy food for the last decade.


At chrysalis we want to celebrate this iconic cuisine in our own way, and our own voice. Running Jan 16th- Feb 7th

3. prawn, lightly poached, sauce of the heads, smoked chicken skin, and fennel pollen

4. Artichoke, Whipped Idiazabal & Artichoke Veloute, Raw Mushroom

5. Salt Cod Dumplings & Potato, winter tomato and saffron water

6. BF tuna. cured in dry aged beef, grilled,

7. Iberico Pluma, local honey, paprika, olive oil, fermented pepper

8. Galician Style Beef, grilled apple romesco, sherry jus, confit leek


9. Marcona Almond Milk Torrijas, Green Coffee Caramel, Black Truffle
