With more than 26 years of experience, he brings deep expertise from his time as an Executive Chef in Canada, restaurant owner, and his work in luxury hotels and Michelin-starred restaurants.
Born in Italy’s Marche region, Chef Franca began cooking with his grandmother, learning the values of simplicity, respect for ingredients, and the joy of sharing food. His cuisine reflects the spirit of Marche—balancing land and sea, seasonality, and tradition—with signature elements like handmade pasta, olive oil–based cooking, seafood, and rustic meats.
Throughout his career, he has developed a strong foundation in both fine dining and large-scale operations, blending culinary excellence with practical leadership. His background as a restaurant owner also gives him a sharp business perspective on menu creation, cost management, and team development.
At Eataly, Chef Franca oversees menu development, kitchen operations, and culinary standards across multiple dining concepts. His leadership focuses on mentorship, education, and respect for ingredients, inspiring teams to deliver authentic Italian cuisine with precision and care.

Full payment is required at the time of booking, and all sales are final. We do not offer refunds for classes or events.
We reserve the right to reschedule or cancel any class due to unforeseen circumstances, including weather. If that happens, we will contact you using the email or phone number you provided and offer either a full refund or a credit for a future class.
Please note that we cannot offer credits, transfers, or refunds for last-minute illnesses, work conflicts, personal emergencies, or other situations beyond your control. However, you are welcome to send someone in your place if you can no longer attend.
