Introducing Our First Chef’s Dinner!

In celebration of Chef Ivan’s birthday, this menu is a personal expression of the flavors, memories, and dishes that inspire his cooking.

Optional wine pairings are available for purchase to complement each course.

Infladita - grey squash, squash blossom cream, chayote

Aguachile - scallop ataulfo mango tigers milk, lemongrass, popcorn

Mahi Mahi - ancho smoke, cilantro rice cake, tomatillo fumet

Flauta Tostada - whipped kennebec potato, wagyu birria, cilantro creme freche, salsa macha

Quail - pink mole, golden beet, lemon cashew

Jicama Impossible Cake - caramelized jicama, coffee chocolate sponge, vanilla flan, horchata ice cream
