What if nothing went to waste? This menu is an ode to the ingredients that come through The Grocery’s doors and the farmers, fishermen, and purveyors who bring them there. From scraps and stems to bones, shells, and brine, every part is given a purpose and a place on the plate.

This experience puts the spotlight on the producers themselves. For Chef Kevin Johnson, there’s no greater way to honor the people who grow, catch, and raise our food than to make the most of every last bit.

Thoughtful, resourceful, and deeply rooted in respect for the ingredient, this is a lunch that celebrates the people behind the food and proves that nothing good should go to waste.
