The evening begins with the dramatic breakdown of an entire bluefin tuna with Chef London alongside North Carolina fisherman John Mallette, offering guests an up-close look at the skill, precision and tradition behind one of the ocean’s most prized ingredients.

From there, explore a series of live-fire and tasting stations where an exceptional roster of chefs transforms every part of the fish. Experience pristine sashimi and hand rolls alongside flame-kissed collars, grilled steaks and other preparations that showcase the remarkable range of bluefin, from raw to fire-kissed.

Joining James London are Jeremiah Langhorne of The Dabney, Michael DeCicco of Linnette’s at The Dunlin, Juan Cassalett of Malagon, Jill Mathias of Chez Nous, Jamie Davis of The Hackney, Daniel Murray of soon-to-open Fathom and additional chefs bringing their own perspective to this singular ingredient.
