About Akashi-Tai:

Akashi-Tai sakes are the fruit of the quest for excellence undertaken by the Akashi Sake Brewery. This family-run brewery has been based in the port city of Akashi since 1856. The Yonezawa family has worked tirelessly to refine its expertise over the decades, and is represented nowadays by Toji, or Sake Master, Kimio Yonezawa. For several generations, the family’s history has been wrapped up in the art of rice fermentation, passing down expert knowledge of flavours and a passion for detail.

About Hatozaki:

Hatozaki is the blossoming of art and culture. It continues the tradition of East Meets West by honoring the century-long relationship between Scotland and Japan. The whisky is named after the lighthouse in Akashi-City, where it remains a guiding symbol of dependability and the exchange of ideas. Founder, Kimio Yonezawa, honors Scotland by sourcing premium barrels from the country and provides a Japanese identity by carrying the barrels to Japan. Here, he creates a harmony of blended whisky by using humid summers and dry, stable winters as the whisky ages in both American and Japanese oaks. Kimio then uses his two-fold blending process to artistically marry the barrels together to create a delicate, complex whisky.
