Welcome Snack
Marinated shrimp, VT Farmstead Governors cheddar cheese, spicy infused Vermont maple sauce, and preserved lemon over seared grits
Brisket
“Corndog Wellington”
Maplebrook Farms mozzarella cheese, baby mushroom, North Country Smokehouse ham, covered in corn batter, rolled in sweet potato and cooked until golden brown and crispy. Spicy Vermont maple mustard is served on the side.
Coulotte
Marinated Steak Pasta Bite
Fresh beet pasta from Trenchers Farmhouse (Lyndonville VT) with green apple beurre Blanc, made with Harpoon Cider, served on maple garlic focaccia.
Prime Rib
Accompanied by potato terrine with local egg yolk, panko coated heirloom tomatoes with whipped feta cheese, fresh herb pesto and crispy shallots. Served with pistachio horseradish crème fraiche and house made demi-glace.
