Slow Fish Collab Series 2024: A Culinary Celebration of Sustainable Seafood

Chef Allen Susser, Slow Fish Chair of the nonprofit organization, Slow Food Miami spearheads Slow Fish Collab Series 2024.

The series kicks off on March 14th, 2024, with an exclusive dinner hosted by Chef de Cuisine Diana Tandia of Essensia Restaurant at The Palms Hotel & Spa, a Slow Food Snail of Approval honoree since 2011. Essensia, located just steps from the ocean on Miami Beach, focuses on mindfully-sourced Mediterranean-style cuisine with Asian influences.

Chef Diana, known for her passion for seasonally inspired cuisine, will showcase her expertise in crafting delectable dishes that highlight the abundance of sustainable seafood available in our oceans. The menu will feature seafood contributions from South Florida aquaculture sponsors, Sun Shrimp and Blue House Salmon.

In addition to savoring exquisite dishes, attendees will have the chance to view engaging and beautiful films by local nonprofit, Sereia Films. Sereia Films Executive Director Sarah Curry is a Slow Fish member. These films “tell seafood stories” about like-minded individuals, including local influencers, chefs, and industry professionals, who share a commitment to sustainability. The event will provide a platform for networking and collaboration, fostering a community dedicated to making a difference in the world of seafood.
