FIRST COURSE SLOW COOKED WILD BOAR BOLOGNAISE
Petite Crepe Filled with Pecorino Ricotta & Fresh Herbs
Stark-Condé, Syrah, Stellenbosch 2015
Typically of our vineyards, it makes an elegant floral wine rather than a big in your face style. From the previous vintage we started to introduce a small amount of co-fermented Viognier and Roussanne. Although co-fermenting Roussanne is not very common, it is allowed in Hermitage and adds a finely textured tannin as well as some exotic perfume notes.
SECOND COURSE LOCAL HOT HOUSE GREENS, ROASTED APRICOTS & TOASTED HOUSE MADE BRIOCHE CROUTON
Blood Orange Honey Thyme Vinaigrette
Stark-Condé, The Field Blend, Stellenbosch 2016
A balance between the richness and perfume of the roussanne and viognier and the fruit and freshness of the chenin and verdelho. 2016 has a very tight structure with a good acidity.
ENTRÉE GRILLED TENDERLOIN OF BEEF, CHARRED LOCAL HOT HOUSE TOMATOES
Modesto Port Wine Reduction
Crispy Tater Tots & Roasted Green Beans
Stark-Condé, Cabernet Sauvignon, Stellenbosch 2015
“...reveals terrific notes of blackcurrants, smoked herbs, tobacco and leafy herbs. With medium-bodied richness, a very classic, fresh, structured style, present tannin, and a great finish, it’s a beautiful wine.” - Jeb Dunnuck 91 points
Stark-Condé, Three Pines, Cabernet Sauvignon, Stellenbosch 2014
“Remarkably consistent from vintage to vintage, Three Pines is always among the best Cabernets in the Cape, showing the deep colour, structure and intensity of the cooler, wetter Jonkershoek Valley. This is a stony, focused red with tannic support from 5% Petit Verdot and texture from 2% Merlot. A wine that ages well. Drink: 2017-25” - Tim Atkin 95 points
DESSERT RASPBERRY MILLE FEUILLE WITH FRENCH VANILLA CRÈME
Fresh Raspberries
M.A.N Family Wines, Methode Cap Classique Brut
“The NV Méthode Cap Classique Brut has a bright, lively, citrus fresh nose that is well defined and exudes joie de vivre. The palate is lightly toasted on the entry with fresh lime and citrus lemon, the acidity well judged with a long and poised finish. What a top MCC - this comes highly recommended.”
