The Agave Spirits Institute's mission is to be the forefront of education development for agave spirits around the world; to share and spread the world of agave and its adjacent cultures with professionals bringing awareness to consumers world wide.

This in person course is open to everyone over legal drinking age; there are no prerequisites. The introductory special price for Texas is $1377 USD for the 4 day program.

In this 4 day intensive course seminar we will cover:

Day 1: Mezcal Specialist Seminar -

Learn the overview of Mezcal history, culture, mythology and the Tequila story.

Learn the production methodology, and legal categories and styles, terminology and vocabulary of the Denomination of Origin Mezcal.

Learn descriptive and comparative technical evaluation technique with a proprietary grid.

You'll be provided with theory hand book, maps and diagrams, and 14 Agave Distillate samples bottled exclusively for the Agave Spirits Institute.

-Theory Examination will take place the following morning before the Mezcal Sommelier Seminar.

Day 2 - Mezcal Sommelier Seminar -

Learn about the 40 different Mezcal producing agaves, terroir, climate & geography.

Learn about agave biodiversity, reforestation, conservation and sustainable industry efforts for wild and cultivated agaves.

Learn about formal agave spirits sommelier service and practices.

Practice sensory technical organoleptic evaluation with every major agave specie.

You'll be provided with theory hand book, maps and diagrams, and 14 Agave Distillate samples bottled exclusively for the Agave Spirits Institute.

-Theory Examination will take place the following morning before the Agave Spirits Advisor seminar.

Days 3 & 4 - Agave Spirits Advisor Course -

Develop advanced understanding of sensory evaluation techniques.

In this intensive course we cover all major agave species, agave regions, and agave spirits made throughout Mexico and around the world.

Learn the legal classifications and categories and styles of the Denominations for Mezcal, Tequila, Bacanora, Raicilla, Comiteco and Sotol.

Learn about the uncertified Destilado de Agave, Destilado de Pulque, Destilado de Dasylirion, and other regional agave spirits.

Taste and learn about agave spirits from Venezuela, Peru, Ecuador, USA, South Africa, India, and Oceania.

You'll be provided with two theory hand books, maps and diagrams, and 28 Agave Distillate samples bottled exclusively for the Agave Spirits Institute.

- Theory Examination will be on-line post-course within 2 weeks.


The course is being presented by the Agave Spirits Institute founder, Master of Agave Spirits Daniel Rodriguez, an International Wine & Spirits Guild Certified Wine & Spirits Instructor, and Certified Executive Fine Spirits Sommelier; in conjunction with the ASI's Academic Spirits Advisor, Master of Agave Spirits, Oscar A. Montes Iga, International Wine & Spirits Guild Certified Senior Wine & Spirits Instructor and Certified Executive Fine Spirits Sommelier.

This course is brought to you by the Agave Spirits Institute, in collaboration with ASI's authorized program provided, the Uncorked Vintage Academia, and in liaison with our host venue Desert Door Distillery.
