Southold Bay Oysters, is a shellfish farm growing Southold Shindig Oysters in the waters of Southold Bay, on the North Fork of Long Island, NY. Southold Shindigs are Eastern Oysters (Crassostrea Virginica) or Atlantic Oysters. They are “true oysters” native to the eastern seaboard of North America. Southold Shindigs are grown in deep water in the center of Southold Bay. Their taste profile begins with a burst of brinines that quickly transitions to a smooth vignette with a hint of sweetness and mineral finish.
