Emmaline is pleased to present award-winning wine and spirits maker, Jean-Charles Boisset of Boisset Collection. We invite guests to enjoy a four-course dinner matched with wine pairings from the Boisset Collection, with a personal appearance by Jean-Charles Boisset.

Jean-Charles Boisset is an innovator, designer and vintner who leads a family owned collection of more than 25 luxury lifestyle properties and brands. He is dedicated to elevating the art de vivre and encouraging people to explore all of their senses through experiences at the collection’s wineries, gourmet shops and retail boutiques.

Four-course menu with wine pairings includes:
Cocktail reception
Passed hors d’oeuvres
Goat cheese croquettes, wild rice arrancini, and shrimp vol-au-vents

First course
Salmon Carpaccio

Duck Cassoulet
Duck leg confit, giant bean cassoulet, orange gastrique, golden raisins
Pairing: Buena Vista Sonoma Coast Pinot Noir 2017

Third course
Beef Medallions Oscar
Tenderloin medallions, jumbo lumb crab, Béarnaise, celery root purée, heirloom root vegetables
Pairing: Side-by-side Louis Bernard Châteauneuf Du Pape 2016 and Raymond Vineyards Napa Valley Reserve Cabernet Sauvignon 2017

Dessert course
