Think about Vietnam's Bahn Mi sandwich, it's just a better version of a baguette sandwich than has ever been served on the streets of France.

We hope to celebrate this brasen re-invention of dishes that has often been introduced by unwelcome visitors (in this case the French) the world over and been improved by local innovation. This act of culinary resistance has happened and will forever happen creating more flavorful and in many cases more memorable versions of what was brought from afar. This supper will be an abreviated exploration of this magical mash-up and the things we have come to love in our own borrowed home of the Chi where we are lucky enough to taste some of that very rainbow. We cannot wait to share with you.
