Heritage Fire fosters the relationship between local farming and emerging chef and restaurant communities, which grapple with having to pay premium prices in order to serve their guests safer, responsibly raised, and flavorful food. Heritage Fire features whole animals roasted over live fires by 50+ local and national chefs. Dozens of animals are represented and showcases en plein air amongst the impressionistic hills of Snowmass. The event focuses on traditional outdoor cooking techniques, paired with free-flowing wines from more than 35 boutique producers, craft beers and spirits, and small-batch ciders. The list of heritage and heirloom foods includes dry-aged beef, whole pigs, lamb, goat, squab, rabbit, duck, fish, chicken, artisan cheeses, oysters, and heirloom vegetables.
