Chef Series invites you to share, connect, converse, and learn all while sharing a meal. Come celebrate the dynamic culture of Laotian food with a paired cocktail dinner in the lululemon Fuel Space.

AMUSE: Rice Dumpling | Sakoo Yat Sai - fermented radish, mushroom, peanut

Village Ghost Aperitif • Laotian rice wine, sake, banana anise tincture, sesame leaf

APP: Beef Tartare | Laap Dip - toasted rice, shallot, herbs

Ube Martinez • Vietnamese floral gin, clarified purple potato, dry cherry liqueur, Thai bitters, fried lotus root

MAIN: Duck Breast | Kalee Ped – curry, lemongrass, galangal

Stay Bold Punch • Chinese baijiu, mezcal, roasted corn tea, bitter melon, ginger, lemon

Bios

Brenda’s love for food began at home, where meals are cherished expressions of love. While Asian cuisine was the heart and soul of her upbringing, Brenda found herself still hungry for a deeper understanding of other cuisines. Driven by that passion, Brenda pursued the restaurant industry, fulfilling those cravings and eventually dedicating over 15 years in professional kitchens throughout Chicago. She currently serves as the Concept Chef of lululemon, overseeing the Experiential Fuel Program across North America.

Jason Basa Nemec has been making cocktails for nearly two decades, and has worked at a number of respected bars, including Kumiko, Scofflaw, and Clyde Common. A former college professor, Dr. Basa Nemec is the founder of In Bar (@inbarcocktails), a bespoke mobile cocktail experience where he specializes in classes, private events, and drink menu consulting. He has family in the Philippines and has traveled extensively in Asia, and is excited to blend bold Southeast Asian spirits and flavors in cocktails designed to complement Chef Brenda’s food.
