Veal Sweetbread: Adjika, Walnuts, Dill, Pickled Vegetables.

2nd Course -
Mtsvadi (Grilled Lamb Lollipop): Onion, Apricot, Spicy Red Bell Pepper Jam.
Pairing: Pedernales Cellars, Texas, Viognier, 2014.

3rd Course -
Salmon Shashlik with Cucumber Scallop: Olive Oil, Whole Grain Mustard, Tarragon.
Pairing: Lidio Carraro, Serra Gaucha, Merlot, 2013.

4th Course -
Durham Ranch Buffalo Delmonico: Grilled Baby Fennel, Coriander Parsnip Puree, Pomegranate Veal Stock Reduction.
Pairing: Chateau Montelena, Napa Valley, Cabernet Sauvignon 2012.
