Cured Salmon from the Ardour, Roulade of “Poulet au Pot” (Chicken Roulade stuffed with Chicken Liver, Duck Rillette, Egg, Bread Crumb, Garlic)

Served with a cold sauce of Gherkins, Shallots, Hard Cooked Egg, Oil, Vinegar, Carrots & Turnips with Rissoles aux orties et Laitage, Pastries with Farmer’s Cheese, Pine Nuts & Braised Lettuce

Wild Mushroom Tart, Riche Pot Sarasinois (Stew of Braised Duck, Oranges, White Wine, Plums, Dates, Cinnamon, Ginger, Apples, Raisins, & Almonds)

Paupiette of Veal with Shallot and Spinach stuffing, Seared Lamb Chop wrapped with Lamb Pancetta, Braised Leeks & Endives

Pear Tart with Almonds, Pain d’Epices with Roasted Lady Apples filled with Honey, Crème Fraiche,
