Wine Vault & Bistro is pleased to announce a 5-course wine dinner featuring the wines of Austin Hope in Paso Robles. Winemaker Samantha Taylor will be here in person to host this dinner. A native of Lodi, she is a wine business graduate of Cal Poly’s Wine & Viticulture program whose winemaking career began the day she received her rejection letter to their MBA program! Fifteen years later, she now works hand-in-hand with winemakers Austin Hope and JC Diefenderfer overseeing the daily winemaker operations of Hope Family Wines, including Austin Hope, Treana and Quest, all of which we’ll be pouring. We hope you'll be able to join us for what promises to be a fun evening of tasting great wines paired with great food! Wine notes and bottle prices are at the end of this announcement and the menu is below.

HEAD’S UP
Seating is EXTREMELY limited. We have a very limited number of tables for couples who want to sit by themselves so please let us know if you’re willing to sit at communal tables as that will GREATLY increase your chances of getting in. We also have two firepit tables for two (https://www.winevaultbistro.com/fire-pit) available so let us know if you’re OK with those tables if you want to sit by yourselves. If you’re a party of three or more there won’t be a problem getting your own table. We are currently limiting party sizes to a maximum of six.

Wine Vault & Bistro is located in the heart of San Diego between Little Italy and Old Town at 3731-A India Street on the upstairs terrace. Follow the black handrail up the stairs from the sidewalk to our front door. Our phone number is (619) 295-3939.
PARKING
Meters are free all day on Sunday. Free non-metered on-street parking is also usually available within a 3-block radius. You can also park in the lot behind Shakespeare Pub two doors down, but do not park in El Indio's lot unless you want your car towed! If you can’t find parking next to the restaurant, there’s always LOTS OF PARKING on San Diego Avenue and the adjacent side streets just past the Chevron station across Washington Street. So please don't drive yourself crazy endlessly going around in circles waiting to pounce on that perfect spot when there's TONS OF PARKING less than three blocks away!
WINE SALES
Although some wines may be in limited quantities, all wines poured at this dinner will be available for purchase at the restaurant until sold out. We reserve the right to limit sales of any rare or allocated wines at our discretion.
WINE NOTES & BOTTLE PRICES
2019 Treana Blanc ~ $22
(Paso Robles) Winemaker’s Notes: 47% Viognier, 35% Marsanne + 18% Roussanne. A stunning, full-bodied, new-world Rhone-style white blend with aromas of orange blossom, honey, peach nectar and a hint of tropical passion fruit. All of those aromas continue on the palette and evolve into rich roasted pineapple and dried apricot with notes of honeysuckle. The finish is long and weighted with a creamy texture that is brightened with a touch of acid.
NV Austin Hope Chardonnay ~ $17
(Paso Robles) Winemaker’s Notes: A multi-vintage blend. A beautiful golden hue anticipates bright tropical notes on the nose. Shows riper warm-climate qualities that are harmoniously balanced with the brisk acidity and lemon zest notes of the cool-climate fruit. Clean and fresh entry, gaining midpalate weight with layered tropical and honeydew flavors, all finishing with a crisp flourish.
2022 Treana “Quest” Red Blend ~ $23
(Paso Robles) Winemaker's Notes: Cabernet Sauvignon + Cabernet Franc. An exciting and unique blend that displays a beautiful herbaceous nose of anise seed, warm chocolate and fresh mint. On the palette flavors of black fruit, dark chocolate and a slightly earthy nuance of leather are present. On the finish, soft fine tannins leave a light coat on the palette and mingle with a delicate touch of acidity that balance the wine and allow the flavors to linger.
2021 Treana Cabernet Sauvignon ~ $27
(Paso Robles) Winemaker's Notes: A quintessential Paso Robles Cabernet Sauvignon. From the depth of color and intense nose, this wine is made with structure and purpose. On the palate, flavors of beautiful rich blackberry, warm vanilla, toasted coffee and black cherry are finished with firm but refined tannins.
2022 Austin Hope Cabernet Sauvignon (1 Liter ~ 33% more than a regular bottle!) ~ $53
(Paso Robles) Winemaker's Notes: After harvesting the grapes, select vineyard lots were fermented individually in stainless steel tanks for 10-14 days. Extended macerations and carefully managed pump overs enhanced the extraction of color and tannin. The lots were aged separately for 11 months in a combination of 10% new, 25% once used, and 65% two to three times used French Oak. Through a combination of tasting and analytics our best lots were determined and the initial blend was assembled in late summer of 2021. As a whole, this blend was aged an additional two months in 75% new and 25% once used French Oak. The wine was racked just twice during its cellar life, with the final racking occurring just prior to bottling. Displays a beautiful ruby hue with enticing aromas of fresh black cherry, burnt sugar and a slight smokiness. On the palate, flavors evolve with vanilla foam, ripe dark fruit, roasted coffee and nuances of spice. This full-bodied wine is rounded out with smooth supple tannins that are brightened with a touch of acidity to balance this crowd pleasing Cabernet Sauvignon.
Magdala Spanish Orange Brandy ~ $35
A Mediterranean orange liqueur made by steeping lots of orange peels in grape brandy carefully distilled in small batches at the Torres distillery in Barcelona. Ageing in old oak casks produces an aromatic elixir, silky in texture and exceptionally elegant.
