Corima is honored to welcome Chef Rosio Sanchez as part of our Circle of Sharing pop-up series. Rosio cooks from a place of deep intention, weaving together the flavors, memories, and techniques gathered throughout her career. After many years at Noma, where she worked both as a pastry chef and in the test kitchen, she forged her own path that bridges creativity with a profound respect for Mexican culinary tradition. Through her restaurants in Copenhagen — Hija de Sanchez, celebrated for its soulful everyday tacos, and Sanchez, a refined and seasonal tasting menu — Rosio showcases the full spectrum of her cooking: vibrant, playful, and rooted in home while shaped by the world. We are thrilled to share this moment in our kitchen with her.
