Mumbai-based Marina Balakrishnan is a prominent figure of Kerala vegetarian food and the founder of the Oottupura ("the pious eating place") dinner experience, where she brings the warmth of a traditional home-style Keralite meal to private homes and venues. Chef Balakrishnan has taken her unique culinary prowess all over India as well as internationally to Bangkok, Milan, and Marrakesh – and, on October 2, Marina will bring her Oottupura experience to New York City's Baar Baar. The dinner will focus exclusively on seasonal vegetarian cooking with ingredients procured from Kerala, combining Ayurvedic principles with traditional flavors and ancient techniques. Her culinary sensibilities are rooted in her childhood growing up in the Malabar Coast (specifically, the northern Kerala state, Thalassery), but perfected by her technical training at the Natural Gourmet Institute in New York City and her time at GAA, an Michelin-starred Indian restaurant in Bangkok.
The Oottupura is cooked with the spiritual energy of healing and nourishment, bringing together taste, texture, and nutrition to create the ultimate satisfying meal. Please note, each component of the Oottupura is served together, family-style.
