New Year’s Eve Dinner Menu
1st Course
Red and gold beet tower with goat cheese,
tarragon oil, strawberry puree and dill flowers
2nd Course
Wagyu beef carpaccio topped with golden Osetra caviar
on sautéed oyster king mushrooms with garlic shallots and
butter on toasted brioche bread
3rd Course
Butter garlic lemon prawns with diced peach compote
and cucumber-mint juice
4th Course
Seared filet mignon with carrot and sweet potato mash, shaved
zucchini rolls and chianti red wine sauce
OR
Oven-roasted lobster tail on squid in risotto, white asparagus
and a San Marzano tomato sauce with flying fish roe for garnish
Dessert
Chocolate banana cake with espresso fudge frosting and vanilla bean gelato
