Chef Rafael Castillo is from Mexico’s food capital - Merida, Yucatan, where he grew up in the kitchen with his mother and grandmother. He’s since travelled across the continent, sharing his passion for the culinary arts with everyone in his path.
Fonda Fora is a nod to the celebrated fondas found throughout Mexico. “Fonda” is used to describe a range of restaurants, from classic white tablecloth dining to modern, chef-driven restaurants. “Fora” is the plural of forum, is a place to gather, converse and enjoy an incredible meal amongst friends.
Chef Castillo’s food is not your average North American vision of Mexican cuisine; it’s regional and upscale - and absolutely delicious!
