Ironbound Farm is proud to welcome longtime friend of the farm, Chef AJ Capella, back to the Ciderhouse for our final installment of the 2022 Harvest Dinner Series.

AJ is no stranger to the Motherfire, having joined forces with Ironbound Farm kitchen crew for 2 previous sold-out Chef's Table Dinners. This time around, Chef Capella is bringing a Thai-inspired menu that will be the preview of his soon-to-launch venture with NJ's boutique ramen house, Ani Ramen. This menu will utilize ingredients grown and raised on our regenerative farm in celebration of our late-fall harvest.

The evening will begin with a cocktail hour of passed apps and cocktails, followed by a multi-course dinner in our Four Season's Tasting Room. Each course will be paired with a one-of-a-kind cider, cider cocktail, or house-made wine. Guests will also be among the first to sample Ironbound's new line of Harrison apple hard ciders, a historically-rooted project that's been a decade in the making.

ABOUT THE CHEF

The winner of the Garden State Culinary Arts Foundation 2017 Rising Star Chef Award, Chef AJ Capella has been working in restaurants and cooking for half his life. After graduating from CIA, AJ spent a bulk of his career as chef de cuisine at the Ryland Inn. AJ later went on to work with Anthony Bucco at Uproot, as well as Grant Achatz’s restaurant The Aviary at Columbus Circle. AJ’s style of cooking could be called “modern American” with influences coming from all over the world, but utilizing local, seasonal ingredients will always be his guide. Ultimately, A.J.’s mindset is simple - making the best food possible at all times.
