« FOUR-MAINS » means « four hands ». WHY ? Because it is a collaboration between a chef and a sommelier from France in Los Angeles. The idea behind it, is to create an ephemeral restaurant for a few fortunate guests. It’s like traveling to Paris without the jet lag.
For the first dinner series, FOUR-MAINS is honored to have the chef Valentin Raffali from Marseille.
Inspiration behind the menu : The French Riviera meets California with an emphasis on small local farmers, seasonal produce, and locally caught fish.
Few words about the chef :
« Valentin Raffali started to cook at the age of 15 in Michelin starred restaurant such as « Entre Vigne et Garrigue », « La Mercerie » in Marseille, and « Chez Devon » in NYC. It’s only in NYC that Valentin finds his own style. Spontaneous with intense flavours, the taste of the flame and charcoal. Val cooks the way he loves to eat, spicy.
Back in France, he opened LIVINGSTON in Marseille where he is the head chef. A few months after the opening Livingston won the best French wine bar by Le Fooding »
