Join us for an unforgettable evening of exquisite wines and gourmet cuisine at Quattro Restaurant. This wine dinner will feature wines from Fortunate Son Winery, an exceptional Napa Valley winery known for their rich, bold flavors and elegant craftsmanship. Each wine will be perfectly paired with a multi-course dinner crafted to elevate your dining experience.

Kick off the evening with a Welcome 2023 Summer Dreams Sauvignon Blanc paired with delightful canapés:

• Crispy rice, wagyu beef tartare, caper mayo
• Mini taco with chicken and pico de gallo
• Smoked salmon roll with toast and caviar

First Course: 2021 The Dreamer 100% Cabernet Sauvignon

• Bold aromas of blueberries and figs with hints of vanilla. Paired with 28-day cured duck breast, vanilla marinated grapefruit salad, and baby cress.

Second Course: 2021 The Visionary Cabernet Sauvignon (Exclusive to this dinner!)

• Dark fruit, plum, and ripe fig aromas with hints of cocoa nib and tea leaves. Paired with Salmon mi cuit, basil pesto risotto, sun-kissed tomato, and lemon oil.

Third Course: 2021 The Warrior 100% Cabernet Sauvignon

• Rich black cherry and dark fruit flavors with a powerful yet fine tannin structure. Paired with pressed pork belly, dehydrated apricot puree, miso soy sauce, and savoy cabbage.

Dessert: 100 Acre Fortified Cabernet (Port)

• 53% milk chocolate cremeux, hazelnut chocolate crunch, pomegranate gelee, freeze-dried honey, Guinness brown bread, and olive oil and sea salt ice cream.
