Featured Sakés at Water Tower Fine Wines
In the last couple of years, we have tried a range of sakés, which to put it simply, are rice "wine". Prior to Covid, we had been offering some sake tastings on Saturdays. While those tastings went away like out traditional Friday nights have, we still think sakés are interesting.
We are offering three as our featured wines this week: two Junmai Ginjo and one Honjozo. Honjozo is a type of tokuteimeishoushu – or “special designation” sake – that’s fortified with a small amount of distilled alcohol, added into the moromi at the end of the fermentation process. Generally speaking, Honjozo sake tend to be lighter and drier than their Junmai counterparts.
