Menu is as follows:
1st - Steamed mussels with coconut-curry broth, roasted corn and mango relish
2nd - Roasted shoulder of lamb on a carrot puree with fava beans, fondant potato, black garlic and lamb jus
3rd - Canneles de Bordeaux, persimmon cream, compressed pear and Missouri walnuts
