Join us for a highly anticipated flight night featuring a stellar line-up from Daniel-Etienne Defaix, a historic Chablis domaine whose family roots in the region date back centuries. One of the oldest estates in Chablis, Domaine Daniel-Etienne Defaix, now led by Paul-Etienne Defaix—the 16th generation to take the helm—is known for its traditional approach, extended lees aging, and expressive wines that reflect the region’s iconic Kimmeridgian limestone soils.

This flight will showcase the signature style of Chablis: crystalline Chardonnay with vivid acidity, citrus and delicate floral aromatics, and a distinctive flinty, saline minerality shaped by the ancient marine soils of the region. From brisk and mineral to deeper and more layered expressions that develop with age, these wines offer a remarkable look at one of Burgundy’s most celebrated appellations.

This flight offers a rare chance to explore the remarkable longevity of Chablis through Daniel-Etienne Defaix’s patient, late-release style. From the youthful 2022 Vieilles Vignes to the beautifully mature 2013 Côte de Léchet, 2014 Grand Cru Blanchot, and 2015 premier crus Les Lys and Vaillon, each wine reveals a different expression of site and time. The wines retain Chablis’s hallmark freshness and mineral drive while developing greater texture, savory complexity, and notes of honeyed citrus and orchard fruit—an illuminating look at how gracefully great Chablis evolves.
