Fried Green Tomato Tower
Jumbo lump crab meat tossed with fresh corn and herbs in a light vinaigrette, sandwiched between crispy cornmeal dusted fried green tomatoes, and topped with fresh herbs and a spicy remoulade sauce.
Baby collard greens dressed in a pot liquor vinaigrette with bacon lardon, tomato concassé, and sweet peppers. Topped with pickled shallots and lace corn bread tuile.
Wild caught halibut topped with fresh herbs and andouille chips, served with red bean puree and crispy rice.
Smothered Pork Chop
Pan seared pork chops simmered in a caramelized onion and bacon gravy, served with braised collard greens and crispy fried onions.
Vanilla wafer sponge cake topped with banana mousse, vanilla wafer crumble, vanilla bean whipped cream and brûléed bananas.
