For our second dinner at our new Carlsbad Village location, Napatini, we are excited to share selections from Paso Robles' Cass Winery. In addition to some classic Rhone varietals, like Viognier and Mourvedre, we are also excited to share the Bordeaux style blend, Vintage Ted. For this dinner we'll feature a wonderful line-up of estate wines, with two white wine and one red, perfect for the summer, and two cab/cab-blend wines, perfect for our cool evenings. These wines, coming from a small-production, family/partner run winery will certainly over-deliver. Jim Kern will be joining us from the winery to discuss the Paso Robles wine region, winemaking, and the rich history at Cass. You won't want to miss this memorable evening of wine, food and conversation from both Jim and Chef Erin!
Each selection will be paired with its own wine inspired dinner course, prepared by Chef Erin Sealy. Chef Erin specializes in pairing food with wine, with a slightly different approach than most. Prior to creating a menu, each wine is tasted and reviewed and then she creates a food pairing, highlighting the nuances of each wine. This concept creates a dinner and pairing experience with layers of complexity and unique creations which exemplify the enjoyment of each wine. With a passion for food and wine, Chef Erin delights attendees with a detailed account of the pairing concept and cooking techniques that create each course.
