We welcome the masterful Chef Jennifer Kim, Chef de Cuisine of Proxi! Chef Kim–who has earned a long list of culinary accolades, including Eater Chicago’s Chef of the Year in 2018–brings a bold, bright cooking style to the table at Proxi alongside Chef Andrew Zimmerman, which recently debuted a vibrant new coastal Asian menu. Chef Kim will showcase these coastally-influenced flavors while leaning into their family’s Korean roots, colliding with Bonyeon’s elevated steak-centered dishes in an 9-course affair.
Expect dishes like a beef tartare topped Korean pancake with kimchi and quail yolk, grilled rice cakes with fish sauce caramel, A5 sirloin with apricot ssamjang and pickled fiddleheads, and dry-aged halibut jjigae with smoked kanpachi stock and spring peas.
